What is Extra Full?   
Extra Table developed Extra Full, a four-serving, one-pot meal that can be on the table in less than 30 minutes just by adding boiling water. It doubles as a mobile volunteer opportunity. This Southern Red Beans and Rice meal uses Two Brooks Farm rice grown in the Mississippi Delta, small red beans, and a custom designed spice and vitamin mix. The meal is high in fiber, good source of protein, reduced sodium, and has 22 vitamins and minerals - important items that food-insecure Mississippians' diets lack. The power of this meal pack is that red beans and rice, together, make a complete protein. Who knew? There is nothing like Extra Full in Mississippi. Volunteers will pack Extra Full meals, which will be distributed to area food pantries in addition to the food Extra Table currently ships monthly to the Storehouse Pantry in Vicksburg. Get ready - 100 volunteers will pack 10,000 meals in 60 minutes and barely work up a sweat! 

As many Mississippians lack access to food, Extra Full is a new and delicious source of nourishment through. This project will be the second partnership with the Vicksburg Young Professionals and Vicksburg Warren County Chamber of Commerce!
