Matt Benham, 2020 Teaching Award recipient, and Andy Hatch team up to chat about Grass.

Matt's presentation on how feed affects flavor delved into the theoretical side of how feeding grass makes for great cheese. Andy Hatch, world-renowned cheesemaker at Uplands Cheese, has real-world experience as a seasonal, pasture-based dairy and cheesemaker.
How do theory and reality intersect or diverge?
Matt has since joined Jasper Hill Farm and had time in the vat to explore more of how grass impacts flavor. Bringing the theory to life, he wants to pick Andy's brain from the last two decades and compare it to his recent experiences.
Other questions may be answered, like what concrete definitions of terminology should we all be using to understand the different food animals eat, and how this helps customers buy cheese based on grass.
